|This year has been a bumper crop for tomatoes. This is an easy and delicious recipe to make!
|1 ready made frozen pie crust
4 ripe tomatoes, peeled, cored, drained, sliced thin
1/2-1 onion sliced thin
Package of real bacon bits
3-4 Tab. mayonnaise
1 Tab. basil
Cheddar or Monterey Jack shredded cheese
|Place fresh tomatoes in pot of boiling water for 30 seconds to peel off tomato skin.Core tomatoes and drain in colander. Slice onions thin and tomatoes thin. Combine cheeses, bacon, mayo and mix together. Layer tomatoes, onions and mix twice. bake at 425 for 30 minutes.
